How to go that high:

For the first minute or so just keep on going horizontal and get as much Nice Entries as you can. No need to do any fancy tricks, just focus on building your speed. After that, go as horizontal as you can to the top of the ocean and tailslide. As soon as you tailslide press up and you will jump HIGH. After that, hold down the down key and hope you get starsliding. When you do that, press the UP key again and you will go even higher. Repeat the process until you reach the restaurant!
