How about a hurricane in a bottle? It would be a bit like the black hole, but it would move back and forth across the screen flinging stuff all over the place.
This one breaks with the trebuchet: a line of archers that step forward from behind to release a volley of arrows. To aim you could change angle and power with mouse. Recent research shows a hail of arrows is always cool :)
Just some random ideas; I'm not really the expert on what's going to work for shooting. I mostly focus on the building.
I think retrophil12's saw blade idea could be cool too. It could zip through a castle really quickly leaving a neat hole for it to deal with.
