Either "The Seeker" by The Who (III) or "Paint it Black" by The Rollingstones (III). It is pretty close between those two but both are great songs.

I just remembered "Spanish Castle Magic" Hendrix (I) and "Ziggy Stardust" by Bowie (I). Again classic songs ammd immense.

I don't quite recall which Guitar Hero it was (I'm more into Rock Band), but my favorite song on it was Let There Be Rock by AC/DC because of it's powerful and difficult guitar solos.

I would say One from #3 I don't have a fave on #2 and #1 would be Iron Man.
