What I think the Bible is actually saying is that there were humans that started believing in the God of monotheistic religions 6,000 years ago, which I don't think would be entirely accurate, but more accurate than the Earth being 6,000 years old.

It's good that you understand that the world is not a few thousand years old, but it did not take billions of years for dinosaurs to evolve into modern day animals. The first dinosaurs appeared around 251 million years ago. That's one-fourth of a billion years, not a few billion years. Other than that, your summary of evolution was fine.
