I would make a mostly non-linear science fiction game where you can fly around in a personal spacecraft and take missions to get money to get new stuff for your spacecraft with a bit of story to the missions... Oh, wait. I already played a game like that. Ok, I'd put my own twist on it. Like a difference between storyline missions (4+ related missions) series missions (2 or 3 related missions) and other missions (1 related mission)
I'd make a midevil based game where you're the commander and you can command your army in any way you wish. Not just preset tactics, but create your own.
I think I'd make a Grand theft auto game, except make it with zombies. Premise would really to try to survive a zombie infestation. It wouldn't really involve missions per say, but you would have to scavenge for food, or defend your position you are holding up. It just would have to have the free open, non-linear plot idea to it.
Also it wouldn't be over head camera angle, I've played a few zombie games like that and I just don't like it. Stick with third person please, that or first.
I'd make an RTS about human colonies on distant planets. The colonies get into the big war with two different alien races, one is really technologically advanced and the other absorbs species into its own DNA.
Yeah then after everyone is hooked on it I'll announce a sequel and keep pushing back its release date for 3 years.
