For 00s, Eric Clapton. He released an album with Steve Winwood a few years back, so he counts. John Mayer is also surprisingly good - he's covered Hendrix very well, and toured with Eric Clapton before. He was nicknamed 'Slowhand Jr.' A lot of his parts are very neat too.
