-Dont take the outter corner of the turn... -Turn ontime, this is when you turn and you cant hit the 'wall'. might sound stupid, but lots of people just race normal.. this game is not about speed, but about turning. -Wait 3 seconds after start, then go, otherwise the other cars are going to bother you.
It depend on your speed, if your speed is high you need to start turning much eariler, even eariler if your car has weak grip. If you think you're too late for that turn you should release your thrust or use the handbrake. Crashing gives no point so avoid hitting the sides at all costs.
Just oversteer the turn then turn at the reverse direction. Best point is achieved if you didn't released your thrust and never hit offroad.
Unlocked the last car, it isn't exactly easier to control (in fact it's easy to lose control during a turn instead due to its excellent acceleration) but you can make more points if you can manage it. Since higher speed turn gives better points, it is the best car to use.
To win the last level on hard you will need the red car at least. To become good you should memorize the map and the best moves for each turn, soon you'll drive like a pro, I've owned that by making 150k points.

Well Some extra tips: -DONT BRAKE... if you go full speed in the turn you get more points. just take the turn on the right moment: TIMING! -More accelaration = More friction = Harder turns
