I was just listening to some Joe Satriani and I heard his "=D19C4F4D7743E5A9&index=0">Summer Song". In my Opinion, Joe Satriani is the best guitarist of all time, and I think this may be his best instrumental song. Some of my other favorite Instrumentals are:

Anyways, Soothsayer by Buckethead is kind of mandatory. I also suggest Big Sur Moon, once again, by Buckethead. This one is only about 1:30, but it's amazing.
To live is to die by Metallica, granted it has lyrics in it, but at like the very end of the song for the most part it is an instrumental.
But then again I think all of Metallica's instrumentals are awesome.
I also think some contenders are Eruption by Eddie Van Halen. I hate Van Halen, but I love this song. YYZ by Rush is great. I'll leave my darker metal out of this though.
I'm going to go with "The Call Of Ktulu" by Metallica. It's just an awesomely powerful song. The guitars have a smooth yet edgy sound and the drums are outstanding.
I think my favourite instrumentals will always be "Hideaway" by John Mayall & the Bluesbreakers (w/ Eric Clapton), and "The Ox" by The Who, but of course, there are plenty of other greats, namely "Surfing With the Alien" by Joe Satriani and Pink Floyd's "Interstellar Overdrive", "Pow R. Toc H.", "Obscured By Clouds", "Careful With That Axe, Eugene", "Any Colour You Like", and "The Great Gig in the Sky"
