King of the Hill is an acquired taste. The Simpsons is great, but once you get into King of the Hill, there's no chance of getting out.
You said it! I find the Simpsons to be to juvenile. I can't find the humor in it anymore once I got past the age of 12. King of the Hill is even funnier if you live in Texas.
Speaking of, the last episode that came on Adult Swim last night is one of the funnier ones. Bobby joins a coven of male witches and Hank thinks he is a poker player and calls him 'Ace' the entire episode.
For me, the simpsons is a main stream fast degrading pile of......... family viewing. it's jokes have past the stage of stale and moving into me running away. Don't get me started on the new episodes. I haven't seen "king of the hill" some people seem to hold it in a good regard so I may check it out.
I love Hank's reactions to situations like this. He can't seem to handle anything even remotely liberal. My theory is that he doesn't want the propane era to end. He is obsessed and we love him for it.

Er, how often do you watch the episodes? Some of the humor is juvenile no doubt (the point is to appeal to the masses) but the show is littered with literary references and much of the great humor is high-brow (One of my favorites was the allusion to {i] The Metamorphosis[/i]). Also the shows ability to put a satiric spin on modern events without going overboard and being offensive to every group equally puts it above other shows like it (think Family Guy).
Honestly though the two aren't the best for comparison, King of the Hill is generally meant to be realistic. The Simpsons are meant to boarder on unrealistic while still maintaining enough realism to be relatable.

I suppose, but I can't get past the juvenile humor to enjoy it. As Ernie put it, I don't like comedy to be spoon-fed.
