I don't see why you would want to change your eye color. Unless you're a Naruto person and want to change your eye color to red like a Sharingan. Or some other uncommon eye color... yeah colored eye contacts would do fine.

People sometimes tire on the way they look, whether is be fashion to skin color. In this instance it's eye color.
And as for the actual changing of eye colors that would take surgery, and could blind you, so I wouldn't go with that.
As for the sun making your eyes brighter, that's just the reflection of the light off the eyes creating 'teh sparkles' and what not. But I have blue eyes, and they change to gray to hazel and it depends on the day.

You should try an ancient Chinese art of skin peeling. I believe the Chinese Mafia the "Triad" invented it to extract info from other gangsters. That give you a complete sense of zen.. trust me.
