I like the look of Minecraft. Apparently it's still in beta phase, if I buy it before its full release will I get the full-featured copy at no extra charge?
And you could build any number of things. I saw a guy who'd built the entire Starship Enterprise (is that what the iconic Star Trek spaceship is called), with rooms coming off, beds, conference rooms, it looked extremely cool. Don't try and do a massive project like that in one night, but take a place that you like and slowly model it up.
You could build your house in Minecraft.
I did that in The Sims once. Really helps your house construction abilities!

Its actually still in alpha, but if you buy it now you get every update, including the one that is the final release.
Back to the question as to what you can build. I've built only shelters a mob trap and a few towers. But others have built all kinds of things, pyramids(I plan on building one eventually), castles, underwater structures, airplanes, boats(full ships, not the one you can make on the crafting table), roller coasters, long boat rides(in the boat you make in the crafting table), and I've even seen people recreate real life structures. Minecraft is one of those games thats limit is your imagination.
well on my minecraft account i built a lot of things like a second story for my house a swimming pool an indoor waterfall a rollercoaster and also a statue i think you should do any one of those. Or make a fire starter and go and burn some trees down

You should make a tree village.
1. Plant a bunch of trees (about 3-5 spaces away from each other in a random pattern)
2. Put a single 2 high dirt block stack beside each of the saplings and a torch (it ensures that they grow into big trees)
3. If the saplings haven't grown after about 2 or 3 minecraft days, replant them
4. When a tree has grown, go to the top of it, and and take out a single leaf block that is just above the main trunk and replace it with a sinlge dirt block. Plant a sapling in this new patch of dirt ensuring that it has a torch and a 2 high dirt stack next to it. This will make what I like to call, a "super tree"
5. Repeat until desired forest size is acquired
6. Build wooden (for best aesthetics) houses amongst the trees, built lookout porches in the trees, etc... - make it an awesome tree city
A few more Ideas - You could build a pyramid with traps wired with redstone in it. You could build an underwater house or atlantis city made of glass You could build a sweet castle with towers and parapets and such You could build docks for boats
