I beat the game recently and I realized that I accidentally didn't beat one level enough for the gold medal (Junkyard keeper to be more specific), and so I went back to beat it and I have done it multiple times now and it won't give me credit for the gold....is there a way to fix it?

might just be a bug on your system, cause i'm able to go back and beat levels - and get gold medals.
It gives me credit for the gold medal and the castle being crushed on every other level except Junkyard Keeper. It won't give me credit for it being crushed or the gold medal so I can't get it for my last gold medal level. This sucks.
I started a new game and now in "Junkyard Keeper" and "Who Left that There?" I am not getting credit for the castle being crushed so I can't continue....I restarted my computer and it still won't work.
