'China man' is a term my great grandmonther used to decribe anyone of asian appearance, along with other such gems as '******s' and 'darkies'. She wasn't racist, she was just born in 1896, and that was the way things were. I'd like to think we've moved on in the last 100 or so years, but clearly this game's developer hasn't. It's not clever, or funny, it's just stupid. Not to mention inherently racist, innappropriate and offensive.
Wikipedia has this to say: "the term Chinaman is noted as offensive by modern dictionaries. Its derogatory connotations evolved from its use in pejorative contexts regarding the Chinese and other Asians... usage of the term Chinaman is nowadays strongly discouraged by Asian American organizations."
I don't think that the creator had any intention of malice toward those of Asian ethnicity. I believe he just meant that the character was Chinese. Still, it is good to let him know of this to avoid these issues in the future.
And for those who state this is NOT a racist game... What part of the upgrades (China Man, Red Neck, Black Man, Terrorist, Skin Head, White Nerd) is not considered Racist?

It doesn't really matter anymore because they changed the names to things like "heli man" "heli man 2" "truck (or car, thaboss forgets) man" "truck man 2, 3" "car window man" (or something like that.

I like how you missed all the other character names with negative connotations e.g Skin head, terrorist, and, most notably, black man.
I also find that the game may be making a statement that all the different types of people (although named awfully and poorly) who normally would not get along together, [terrorist, army man : skin head, black man : red neck, china man (possibly)], are now banding together to fight the zombies and save their lives. Showing that in times of struggle people can put their differences aside and fight for a common good.
