elder scrolls oblivion does have medieval stealth, and probably the biggest medieval world there is out there but im not sure about the parkour thing.. so yea its a nice choice for a great game
Dark Messiah of Might and Magic. Can get quite parkour at times, skip the magic skills and you've pretty much got medieval, the only but is it's quite linear
One of the most amazing games ive ever played is Dark Messiah of Might and Magic, buy it on Steam very cheap, has fun class upgrades(be smart and decide what you want for your choice of stealth) There is basically and Archer, a Knight, a Mage, and a theif , i would say those are 'base' classes, even though there are technically no base classes, Weapons are cool and amazing, ive beaten it 4 times begining to end, and am on my 5th run, being close to beat it

With some mods I'm sure you could do some parkour.
