It's close between Ezio/Altair and Prince of Persia... But I would say Ezio/Altair just because they can climb anything, where as Prince of Persia has to get somewhere one way (most of the time).

Ezio from Assassin´s Creed series i think,he seems to be about 50 years(or more)in ACRevelations and he still runs like in AC2.
Ezio.Hands down.That man climbes like a god.PS:The guy in Prototype climbes better but he uses HAX(super powers).
