The turkey is being pursued by hunters and must escape/set traps/beat off the hunters with an arsenal of turkey/thanksgiving related weapons and ammunition. I think that could be interesting.

That's pretty cool but what I could add to that is that there could be different turkeys with different skills. ex. Bob the turkey: 5 speed; 6 stealth; 3 weight.
