I've listened to so many Pink Floyd songs over the years, and I can't understand why they have such an enormous following. None of their songs contain anything interesting.
Will someone explain to me what is so appealing about their music?
Excellent melodies, thoughtful lyrics, some of the best solos in rock music, long, sprawling compositions. Depending on the day they're my favorite band.

David Gilmore has made many of the best solos that you will ever find.
There's nothing memorable about any of them. Just because a solo is longer does not necessarily make it better by any means.

Maybe if my patience was greater, my attention span was longer and my mind moved at a much slower pace, I would be able to appreciate long drawn-out compositions, but when I listen to a Pink Floyd song, I feel like I spend the whole time waiting for something to happen and it never does.
What's "anything interesting"?
Something that makes the music worth listening to. All I've heard from them so far is a bunch of long tuneless tunes that all sound virtually the same to me. If you give me a specific example of a Pink Floyd song that contradicts this point, I will thoughtfully grant it as an exception.
You have to take your time and not put much importance into showy solos; you gotta pay attention to the way they play their instruments and the melody behind the music, not how ****** it sounds or how loud it is. It's sad you don't have a big attention span, indeed then I can understand why you don't like them. But as Rakim said, it's simply taste, and saying their songs aren't interesting or melodious may be right for you, but clearly wrong for many other people.

It is all a matter of taste, you're right. What I'm wondering though is why they're so universally loved. It wouldn't bother me if they just had a small following, but there are so many people around the world who worship them as if they're the greatest band to walk the face of the earth.

I don't happen to like Pink Floyd either, but then again I DO have a ridiculously short attention span, so it's understandable why I wouldn't have the patience to sit through 30-minute recordings! =P
Well, you may not like their longer songs, but what about Another Brick in the Wall? Famous song by them. It definitely does have a melody, it also has a solo, not mind-blowing but nice, it has a nice beat.. and it's not just an innocent little song, the lyrics are deeper and there's an obvious social critique... well you know. Everything a good song needs ^^.
Pink Floyd were the pioneers of conceptual music. The stories their albums tell are very interesting. The idea of albums telling a story and having each song tie together is something that makes fans act more dedicated. Much more than the "fans" of artists with "catchy" tunes.

Wish You Were Here, Money, Young, Hey You, Comfortably Numb. Describe them as whatever you like, they're not "tuneless". Nor are they long, though their long songs including my personal favorite, Dogs, are filled with melody.
Floyd aren't even THAT known for long songs unless you think their usual 6-8 minutes is crazy long, and that's the length of loads of old-school classic Metallica, Zeppelin, Sabbath songs. Sure they go into the 10+ minute frontier sometimes, but those are very much the lesser-known exceptions. Your tastes are probably the issue, not some imaginary fault on the band's behalf. They're just not for you.
And anyway, there's only pity to be had for someone who listens to Pink Floyd and thinks "nothing happens". You're missing out.
