Get a roast doesn't matter what kind. Put it in a pot with potatoes and carrots and whatever else you want. Dump in one can of chicken or beef broth and two cups of water. Then, cover and put it in the oven at 250 and cook it for 4-5 hrs.

Best quesadillas ever:

Tortillas:
3/4 c flour
1/2 tsp baking powder
1/4 tsp salt
3/2 tbs fat (butter, crisco, whatever)
1/4 + 1/16 c warm water (you don't have to be exact)

Filling:
Pepper jack cheese
Sharp chedder cheese
Onions
Bell pepppers
meat of some kind
tomatoe
chilli powder
other spicy stuff
butter
olive oil
vinegar
orange juice (or lemon juice. just needs to be citrus)

Directions:
First you need to make the tortillas. Put the flour and BP in a bowl. Mix the fat into this bowl using your hands or a fork. Put the warm water and salt in another. Slowly mix the wet into the dry until you have a ball of dough. Flour a surface. If the dough ball is sticky, put a little extra flour down. If it is dry and crumbly, you messed up. Knead the dough ball for about 2-3 minutes. It should not be sticky anymore, and should be elastic. rip it into 3-4 balls. Place the balls in a covered container, and let sit for 30 mins.
The filling:
While the dough is resting, cut up the vegetable and meat. You need about a handful of onions, and half a pepper. You can probably use a whole tomotoe. Put in as much meat as you want, or not at all. melt some butter in a small sauce pan on high. Through in the onions, and cook for a few seconds. Then, throw in the peppers and half the tomatoe. Turn down the heat to low, and add some olive oil. Let it simmer for a few mins, than add a splash of vinegar. Lext, add in all the spicy stuff you want, be it peppers or chili powder or whatever. let it simmer some more. If it starts to dry out, add in a little juice. Make sure most of the liquid has boiled away by the time the dough is ready. While this is simmering, grate the cheese. You should also start heating up the pan or griddle for the tortillas. I use a cast iron skillet. Get it as hot as you can, and don't put butter or anything in it.
Tortillas:
When the dough is ready, flour a surface and a rolling pin. Roll the dough out as thin as you can into a cirle. You will probably mess up. As soon as the skillet is hot enough, throw the tortilla down on it so that it there are no wrinkles. have a spatula ready. After about 15-30 secs, you should flip it. there should be light brown spots, but it shouldn't be burnt. Cook the other side, and repeat with the other tortillas. After you are done, turn off the heat for the skillet, or turn the griddle down to low. Put some butter in it, too.

Quesadillas:
Depending on how many torillas you made, you will have one or two quesadillas. Assemble them like this (bottom to top):
Smaller tortilla (because they won't be the same size)
Pepper jack
filling
other half of tomatoe (raw)
Sharp chedder
larger tortilla
Put the quesadilla small side down onto the cooking surface. Cook it until the cheese is melty and the tortiall is crucnhy, then flip it. turn off the heat (unless you have done so already), and just let it sit there while you clean up the kitchen. Take the quesadilla off the skillet, and let it sit for a few minutes.
Eat it.
