When Safer Sephiroth came down while "One Winged Angel" played. Never has a final boss music struck me quite like it.

Another one could be "Evil Messenger/Darkness" of Eternity from Final Fantasy IX. Not only did it start out like a remix of one of my favorite tracks in the game, It is the most epic non-final boss music I have heard in a game to daate.
A close third is "Zero" from Ace Combat Zero.

The music is epic with a touch of sadness, as you are fighting one on one with your former wingman. Once, I timed the most epic part of the music exactly with the cutscene when he launches the V2 you've just tried to disable.
Final fantasy One-winged angel like in the first post, Kingdom Hearts all games had amazing music! Legend of Zelda, mostly the newer ones like Twilight Princess, and an old one OoT.
start of time crisis 4.. They got five finger death punch. Yeah owned.. Not to many games play good music these days.. Its all sound effects, keyboards, and crappy techno beats.. What ever happened to epic guitar rifts
Final fantasy VII's Jenova battle track is amazing. Aside from that, one of my favorite game soundtrack overall is the one from Phantom Brave; absolutely beautiful and soothing; really fit for such an heartwarming game.¸
