Fist of all, it wasn't like the Jews showed up one day and said Fuck off, Palestine. The move was an international objective, backed by the UN. Not only was it backed by the largest group of nations since ever, the Israelis paid for the land, buying it from the Sheiks of Palestine. After buying the land, the Jews built housing for the displaced Palestinians, which only pissed them off more. They started killing people who lived in the Jewish built apartments, and blamed it on the new Israel.
As for brutal military tactics, Israel probably has the most humane bombing strategy in the world; they would call the house they were going to bomb, and tell everyone to get out.
Israel: We're going to blow the house up. Get out.
Palestinians: No.
Israel: We're going to blow that house the fuck up. If you don't get out you will die.
Palestinians: No.
Israel: This is your last warning. The house you are currently in is believed to house terrorist activity. If you do not evacuate immediately, everyone inside the house will die.

The ship was believed to have terrorists (which it did) and other anti-Israeli activists, and the ship refused to reroute. That's like being informed of 9/11 beforehand, then not destroying the planes until they were over New York City. Israeli forces also found videos of "Israeli" soldiers treating the passengers brutally, so the ship obviously had bad intentions, and the attack of the ship was probably intended by anti-Israel activists.
