Considering it's such things are what would have led them to dying in the first place it doesn't seem they wouldn't last very long in such a state.

Actually, yes, they will be humans. They will just lack reproductive systems, and probably the rectum. They will digest every part of food, so there will be no defecation or urination. As for "who they once were", could you please explain?
That doesn't sound very human to me. What is often regarded as sin is just basic human nature, such as having lustful feelings towards another person. Remove these qualities and you fundamentally alter who that person is. If I stopped enjoying sexual things, violent video games, lost my feelings of grief over events in my life, I would stop being who I am.
Further more if going to heaven does alter us in such a fundamental way then there is no point in even a temporary hell as God could simply change that persons very nature and desires.
Simple. Good = those who follow His laws. Evil = those who disregard His laws.
There are many of Gods laws that get disregarded even by followers.

Considering the bible clearly states that Hell is not a temporary state it would seem you do. Actually in order to believe the bible at all you would have to given the number of contradictory passages.
