Ghost, instead of doing absolutely everything on one character, make more characters? On my Redguard, I won't choose to do bad things, such as thief, kill innocents, etc. He's done the Companions, main quest and that's it. I'm not bored of him yet but when I am, I'll make a Breton Mage, or a Wood Elf or Argonian to do Brotherhood and Thieves Guild quests, etc.
And actually running to the place can make it boring since you know what you'll see and it just takes a long time.
Buy a horse? Though you could simply use Shadowmere since you've done the Dark Brotherhood? S/He's extremely strong (in my game even survived a few attacks from an ancient dragon) and can sprint much longer.
And yes, it makes sense to make different games, at least in aspect of perks. I think to unlock all perks of one 'class' (warrior/mage/thief), which represents a third of all perks, you'd have to be lvl 80 or something..

Well, I did... My level 40 Khajit which I did everything on got deleted somehow a few weeks ago, so I made a nord, imperial, and a orc. The Nord was to replace the Khajit (as in re-complete everything), imperial for the imperial missions and such, and orc just to have it.
Use enchanted items/armor that fortifies your health or magicka/magicka regen (health regen never stroke me as particularly effective, maybe I just didn't try it out enough though)
I actually read an article just lately about how to overpower your character without cheating. And by overpower, I mean, OVERPOWER. The key skills are indeed enchanting, but also alchemy and smithing. Make yourself potions to increase smithing and enchanting additionally, make yourself a crafting set, and make some absurdly strong gear.
I don't know about anybody else, but when in regards to melee, I'm pretty sure smithing/enchanting is pretty much vital, at least in my experience. I'm a lvl 31 Khajiit who uses sneak for 99% percent of combat, mostly because I really can't hold my own against anything. I can basically walk in front of somebody and they wont notice, but if somebody does notice, I'm toast. Like I was attacked by a frost dragon, and it pretty much decimated me. More than a couple draugr completely overwhelm me as well. In order to do combat I have to either manage to sneak kill everybody, or use hit and run until I'm completely hidden. Takes forever, especially when there are multiple Draugr Deathlords in a room, and each can survive several sneak arrow hits, even with ebony bow/arrows. It's quite frustrating to be honest. I feel I'm going to have to start to put perks in smithing, which I can't really afford.
@Wyrzen So you're the sneaky guy? Do you use bows? I noticed that as a sneak thief, indeed melee combat was horrible. I had one problem: I activated the thief stone, which meant that lockpicking, sneaking, speech, all those non-combat skills raised pretty darn fast, especially when doing the thieves guild. The only catch is that even though light armor raises fast too, archery, my main combat weapon, did not, since it falls into the warrior stone. So I leveled too fast for my archery skill to follow (and one-handed, which I used too, was only effective until mid-level too). I did hone assassinating people to almost perfection, but as you said this doesn't help against a bunch of draugr or a dragon.
So my tip, never ever use the thief stone. If anything, use the warrior stone and use bows. As a master archer, you are able to defend yourself, believe me.
Did anyone already modded their game? I installed 3 mods so far, Glamdring, Narsil and Anduril and Deadly Dragons which makes dragons so strong that it needs a Dovahkinn to kill it instead of a giant or a mammoth.

i started to download some mods last week. like the: improved menu system for pc, midas spells, 42 third era (morrowind) weapons, quality map (whit roads, region boarders etc.), nude (fe)male, a few that improof textures. and 1 that improves my FPS.
can't wait for the CK to be released tuesday so we can start creating whit more ease. and make some fun stuff ourself.

on the left of the map near markarth, there is a stone called "the lover stone" it's 1 stone whit the power of those 1st 3 (increase all skills)

I use the Thief Stone until I reach the Lover Stone.
I'm going to remake a dark elf assassin. I had a khajiit assassin, but I made a few errors in my skill tree and I don't like the armor when worn by the khajiit. Although khajiit get bonuses in most of the skills I use, it really doesn't matter much. The only real advantage to using characters who have bonuses in skills you use is that it makes the beginning of the game easier, but otherwise there's very little difference in the long run.
One of the problems with using the khajiit is that certain masks remold the face into a human's face (same for argonians). This doesn't really bother me too much though. What REALLY grinds my gears is the texture glitch you have as a khajiit when you wear light dragon armor. A few parts of the helmet don't render and you end up seeing through your character! What really astonishes me is that nobody else seems to notice this from what I can tell! I looked on one of the wikis and they showed a female khajiit wearing the light dragon armor, and the texture glitch existed in that picture too. It's kind of hard to notice, but when you see it, you ALWAYS notice it.
As for the skills, I have 100 smithing, but I took the light armor rout. I regret doing this. In the end, you learn how to make light dragon armor. All the previous light armors become obsolete. By taking the heavy armor route, you still end up being able to make dragon light armor, but you also have the ability to make deadric weapons! In the end, it's pointless to go to the light armor route unless you REALLY want to save that last skill point, but being able to craft deadric weapons is quite an advantage!
