Heh, you're right; after playing Morrowind it's almost frustrating how easy it is to get acknowledged as Dragonborn. A bit more resistance would make it more interesting ^^
I think this is because the people of Skyrim just blindly believe the Greybeards and the Greybeards are almost mythical to the inhabitants if Skyrim. So if a person is summoned to High Hrothgar they just blindly believe he is The Dovahkiin. But it would be nice if there were some disbelievers.
What I miss is more conflicts with the Thalmor. At the end of the game there are still Thalmors in Skyrim, the embassy is still up and running although I have assassinated almost everything that moved there. Some kind of side questline to throw them back out of Skyrim would be neat. As long as it isn't as simplistic as the Imperial/Stormcloak quests (who'd direly need some more tweaking/diversificating too).

Skyrim's my first TES, but i'm sooo addicted i wanna know EVERYTHING 'bout the last ones. This is kinda how i feel for Skyrim (Didn't post the video, go see it yourself.).
Out of the two, I'd say Stormcloaks too, like MegaIPOD; I just don't like the Imperials all that much. Although I must say the most sensible person in that conflict is General Rikke.
But gameplay-wise, it doesn't really matter, except that if you join the Stormcloaks, all Imperial town guards are replaced by Stormcloaks, they stay if you join the Legion or if you don't join any at all.
I would say Imperials because they are more awesome then the Stormcloaks. If they hadn't lost to the Aldmeri Dominion they would even be more awesome but they are the true rulers of Tamriel. And I hate Ulfric Stormcloack. He is just *****ing around that he should be the High King of Skyrim and he wants to gain it trough violence.
Ulfric Stormcloak is ambitious, avid of power, sure, but at least he's sticking to Nord traditions. Rikke is right in saying that the Legion can help Skyrim, but the Aldmeri Dominion played very well in making this conflict unavoidable. Tullius however, if you listen to him speaking with Rikke, shows that he doesn't respect, nay, he openly despises Nord traditions and that is why I hate him. He's supposed to help Skyrim, not make it an Imperial bastion.
How could you not want to join the stormcloaks when the imperials are about to behead you in the beginning of the game?
How could you choose for Nord Rebels who hate all other races and are thirty for blood and power? I think it is just which one you like most. Since the first game I always joined and liked the Imperial quest lines, if they were in the game so Ill stick true to my TES History and join the Imperial Army.
I guess I'll join the imperials then.. I agree that I don't like this much Ulfric because he wants power and it is true that he might be racist to all non-nords of skyrim.
Also, when I learned that the stormcloaks were to attack Whiterun, (wich, in the game, was my first home-city and I love this place) I decided to defend this city so I'm joining the legion, no doubt. :P
